Seventeen years on Fancher Drive
Trinity Fork Spice Works is a woman-owned spice mill in West Dallas. Here is who runs it, how it is built, and what we will and won't do.

The owner
Carol Cervantes
Carol spent fourteen years in food-service purchasing before buying a used hammer mill in 2009 and renting a bay on Fancher Drive. The idea was narrow and has not changed: buy whole spice from importers she can name, grind it the week it ships, and price it so a twelve-seat kitchen and a ninety-seat kitchen pay the same per pound.
She still signs off on every new blend spec personally and runs the Thursday cutting session where the team tastes current production against retained samples from the prior lot.

How the mill grew
2009
One mill, eleven customers
3,200 sq ft bay, a single hammer mill, deliveries in Carol's own pickup.
2014
Blend room opens
Ribbon blender and allergen-segregated room added; first private-label contract signed.
2019
First GFSI audit
Formal HACCP plan, environmental monitoring and a full lot-traceability system.
2024
18,000 sq ft
Four mills, two shifts, and our own delivery route across the DFW metroplex.
How we operate
Three rules we don't bend
1. We name our origins. Every lot carries a country of origin and an importer of record on its COA. If we can't document it, we don't sell it.
2. We don't extend shelf life with fillers. No anti-caking agents unless a customer specifies them in writing, no colour correction, no "spice blend" that is mostly salt unless that is exactly what was ordered.
3. We quote what we can ship. If a crop is short, we say so on the quote rather than substituting an origin quietly. Chefs have reformulated recipes around a silent substitution once and never forgive it.
